Lemon poppyseed yoghurt cake

Homemade yoghurt cake is very popular in France and it is one of the first baking projects that kids get to tackle. It is considered very easy because you don't have to weigh anything, it's all about ratios, based on a 125 ml yoghurt pot. It is traditionally an oil based cake, so it does not require any hard work creaming butter and sugar. One pot of yoghurt, two pots of sugar, three eggs, three pots of flour, a pinch of salt, a sachet of baking powder, a pot of vegetable oil and mix it all together. Add flavourings of choice -- in this case, the juice and zest of half a lemon, some candied lemon peel, a couple of tablespoons of poppyseeds and a teaspoon of vanilla. It makes a very soft moist cake.
